I wasn't really sure what to call this. I didn't want to call it rice pilaf as that would invoke bad memories of high school prom dinners and weird almond slivers alongside cold peas and weirdly squared carrots. But it is a rice side, and it is yummy unlike the bad pilaf memories, and you can mix it up if you want. So rice with stuff it is.

rice, onions, garlic, oil, salt, pepper, and then tomatoes and carrots |

dice the veggies, mince the garlic |
|
saute in some oil to soften a little |
|
add rice and garlic and then saute a few more minutes |
|
stir in the home canned tomatoes, a little salt & pepper, and some water |
|
cook covered on medium low until rice is fluffy, adding more water if needed |
|
serve with parsley, capers, an egg, as a side, whatever suits you |
In some cuisines rice is really underrated.
