CSA week 2

I may be in over my head with the large share I signed up for this year. So much food to cook in a week before the next giant batch of food is ready for pick up.  This week we got spinach, harukei turnips, two portions of bok choy, red russion kale, broccoli rabe, lettuce, rhubarb, and pea shoots.



What I made: bok choy with tofu and mung bean noodles, kale quinoa salad, pea shoots in tummies, pea shoot/lettuce/arugula salad, sauteed broccoli rabe with lemon and garlic scapes, spinach in adai, spinach and potato curry, lettuce in sandwiches, roasted turnips, and rhubarb galette.
